1 cup rolled oats

½ cup creamy peanut butter

¼ cup honey or maple syrup

¼ cup brown sugar (packed)

½ teaspoon vanilla extract

¼ teaspoon salt

⅓ cup mini chocolate chips (optional)

¼ cup chopped nuts or seeds (optional)

Instructions
 

In a large microwave-safe bowl, combine the creamy peanut butter, honey (or maple syrup), and brown sugar. Microwave on high for about 30 seconds or until the mixture is easy to stir. Mix until smooth.

    Add the vanilla extract and salt into the peanut butter mixture and stir well.

      Stir in the rolled oats until they are fully coated and combined. If you are adding chocolate chips or nuts/seeds, fold them into the mixture at this point.

        Line an 8x8-inch (or similar size) pan with parchment paper, leaving extra hanging over the edges for easy removal later. Pour the mixture into the pan and press it down firmly with a spatula or your hands to create an even layer.

          Microwave the pan on high for 1 to 1.5 minutes. Start with 1 minute and check for doneness. The bars should be soft but not mushy.

            Allow the mixture to cool completely in the pan at room temperature or in the refrigerator for about 30 minutes.

              Once fully cooled, lift the bars out using the parchment paper and cut them into squares or rectangles.

                Store the bars in an airtight container at room temperature for up to one week, or refrigerate for longer freshness.
