4 cups fresh blackberries, rinsed

1 ½ cups granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 packet (1.75 oz) fruit pectin (such as Sure-Jell)

¼ teaspoon salt

Prepare the Blackberries: In a large bowl, crush the blackberries with a potato masher until you have a chunky mixture. You can leave some larger pieces for texture.

    Cook the Fruit: In a heavy-bottomed pot, combine the crushed blackberries, lemon juice, and salt. Cook over medium heat for about 5 minutes, stirring occasionally, until the mixture becomes juicy and bubbling.

      Add Sugar and Pectin: Stir in the granulated sugar and packet of fruit pectin into the pot. Mix well to dissolve the sugar. Bring the mixture to a rolling boil that cannot be stirred down.

        Boil: Let it boil for exactly 1 minute while stirring constantly. This allows the pectin to activate properly and helps thicken the jam.

          Add Vanilla: Remove the pot from heat and stir in the vanilla extract. This adds a unique depth of flavor to the jam.

            Test for Consistency: To check the jam's consistency, place a spoonful on a cold plate and let it sit for a minute. Run your finger through it; if it holds its shape, it’s ready! If not, return it to heat and boil for another minute.

              Jar the Jam: Clean your jam jars and lids with boiling water. Pour the hot blackberry jam into the warm jars, leaving about ¼ inch of headspace at the top.

                Seal the Jars: Wipe the rims of the jars with a clean cloth to remove any residue, then seal with the lids.

                  Process (optional): If you want a longer shelf life, process the filled jars in a boiling water bath for 10 minutes. Remove them and let cool completely on a kitchen towel or cooling rack.
