Ingredients
  

2 cans (15 oz each) white beans, drained and rinsed (such as cannellini or navy beans)

1 cup homemade or store-bought basil pesto

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 2-quart baking dish with olive oil.

    Prepare Beans Mixture: In a large mixing bowl, combine the drained white beans, garlic powder, onion powder, and a pinch of salt and pepper. Gently mash some of the beans with a fork or potato masher, leaving others whole for texture.

      Add Pesto: Stir in the basil pesto until the beans are well-coated.

        Combine with Tomatoes: Fold in the halved cherry tomatoes, ensuring even distribution throughout the mixture.

          Assemble the Bake: Transfer the white bean and pesto mixture to the greased baking dish. Spread it out evenly.

            Cheese Layer: Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the mixture.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
