Ingredients
  

1 cup all-purpose flour

2 tablespoons sugar (coconut or cane sugar recommended)

1 tablespoon baking powder

1/8 teaspoon salt

1 cup almond milk (or any plant-based milk)

2 tablespoons apple cider vinegar

2 tablespoons vegetable oil or melted coconut oil

1 teaspoon vanilla extract

Optional toppings: fresh fruits, maple syrup, nut butter, dark chocolate chips, or coconut flakes

Instructions
 

In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together until well mixed.

    In another bowl, mix the almond milk with the apple cider vinegar and let it sit for 5 minutes (this creates a vegan buttermilk).

      Add the vegetable oil and vanilla extract to the almond milk mixture and stir until thoroughly combined.

        Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Preheat a non-stick skillet or griddle over medium heat and lightly grease it with oil.

            Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

              Carefully flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.

                Repeat with the remaining batter, adding more oil to the skillet as needed.

                  Serve warm with your favorite toppings - this can include fresh fruits, a drizzle of maple syrup, or a dollop of nut butter.
