Ingredients

1 cup all-purpose flour

2 large eggs

1 1/2 cups milk

2 tablespoons granulated sugar

1 teaspoon pure vanilla extract

1/4 teaspoon salt

2 tablespoons unsalted butter, melted (plus extra for the skillet)

Optional toppings: fresh berries, whipped cream, maple syrup, and powdered sugar

Instructions

In a large mixing bowl, whisk together the flour, eggs, milk, sugar, vanilla extract, and salt until smooth and well combined. Ensure there are no lumps in the batter.

Stir in the melted butter and let the batter rest for at least 30 minutes to allow the flour to absorb the liquid.

Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with a small amount of butter.

Pour about 1/4 cup of the batter into the center of the hot skillet. Quickly swirl the pan to spread the batter evenly across the bottom.

Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Flip the crepe and cook on the other side for an additional 1 minute.

Transfer the crepe to a plate and cover with a clean kitchen towel to keep warm. Repeat the process with the remaining batter, adding more butter to the skillet as needed.

Serve the crepes warm with your choice of toppings such as fresh berries, whipped cream, maple syrup, or a dusting of powdered sugar.
