Ingredients

2 lbs ground beef

1 cup mashed potatoes (prepared, can be leftover)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup finely chopped green onions

2 large eggs

1 cup breadcrumbs

1/3 cup milk

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

1/2 cup bacon bits (optional, for extra flavor)

1/2 cup barbecue sauce (for glaze)

Instructions

Preheat your oven: Set your oven to 350°F (175°C) and lightly grease a loaf pan.

Prepare the meat mixture: In a large bowl, combine ground beef, mashed potatoes, shredded cheddar cheese, sour cream, green onions, eggs, breadcrumbs, milk, garlic powder, onion powder, smoked paprika, salt, and pepper. If using, fold in the bacon bits for a savory touch.

Mix thoroughly: Using your hands (or a spatula), mix all ingredients together until well combined. Be careful not to overmix, as this can result in a dense loaf.

Form the meatloaf: Transfer the mixture to the prepared loaf pan, shaping it into a loaf and ensuring it fits snugly in the pan.

Add the glaze: Brush the top of the meatloaf with barbecue sauce for added flavor and a beautiful finish during baking.

Bake: Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).

Rest and serve: Once cooked, let the meatloaf rest for 10 minutes before slicing. This helps retain moisture. Serve warm, garnished with extra green onions if desired.
