8 oz (225g) Penne or Fettuccine pasta

2 tablespoons olive oil

1 lb (450g) chicken breast, sliced into strips

3 cloves garlic, minced

1 medium onion, chopped

1 cup sun-dried tomatoes, chopped

1 cup spinach leaves (fresh or frozen)

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning (basil, oregano, thyme)

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken breast, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.

      Prepare the Sauce: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

        Incorporate Vegetables: Stir in the sun-dried tomatoes and spinach. Cook for another 2-3 minutes until the spinach wilts.
