Turkey Breakfast Patties with Avocado and Egg

Easy to make, these flavorful patties are packed with ground turkey, Parmesan cheese, and seasonings. 1 pound ground turkey

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon fresh parsley, chopped (optional)

1 tablespoon olive oil (for cooking)

2 ripe avocados, sliced

4 large eggs

Salt and pepper, to taste (for eggs)

Red pepper flakes (optional, for garnish)

Fresh cilantro or chives (optional, for garnish)

Instructions
 

Make the Turkey Patties: In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, black pepper, and fresh parsley (if using). Mix until just combined, being careful not to overwork the meat.

    Form Patties: Divide the mixture into 8 equal portions and shape them into patties, roughly 1/2-inch thick.

      Cook Patties: In a large skillet, heat the olive oil over medium heat. Once hot, add the turkey patties in batches (don’t overcrowd the pan) and cook for about 5-6 minutes per side, or until they are golden brown and cooked through (internal temperature should reach 165°F). Remove from the skillet and keep warm.

        Prepare the Eggs: In the same skillet, if needed, add a bit more olive oil and reduce heat to medium-low. Crack the eggs into the skillet. Cook them sunny-side up or over-easy, seasoning with salt and pepper to taste. Cook until the whites are set but the yolks remain runny, about 3-4 minutes.

          Assemble the Breakfast Dish: On a plate, place a turkey patty, top it with a few slices of avocado, and gently place a cooked egg on top. Sprinkle with red pepper flakes, if desired, and garnish with fresh cilantro or chives.
