4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup soy sauce

1/4 cup honey

2 cloves garlic, minced

1 inch fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

1 teaspoon sesame oil

Salt and pepper to taste

Chopped green onions and sesame seeds for garnish

Fresh pineapple slices for grilling (optional)

Marinate the Chicken: In a bowl, whisk together pineapple juice, soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil. Reserve 1/2 cup of the marinade for glazing. Place chicken breasts in a large zip-lock bag and pour the remaining marinade over. Seal the bag and marinate in the refrigerator for at least 1 hour, preferably overnight for deeper flavor.

    Prepare the Glaze: In a small saucepan over medium heat, bring the reserved marinade to a simmer. In a small bowl, mix cornstarch and water to form a slurry. Gradually whisk the slurry into the simmering marinade. Cook for 2-3 minutes, stirring continuously until the mixture thickens. Remove from heat and set aside.

      Cook the Chicken: Preheat the grill (or a grill pan) to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Season with salt and pepper. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). During the last few minutes of grilling, brush the thickened glaze over the chicken for added flavor.

        Optional Grilled Pineapple: If using fresh pineapple slices, grill them alongside the chicken for about 2-3 minutes on each side until caramelized.
