4 cups ripe tomatoes, diced

1 cup sugar

1/4 cup apple cider vinegar

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon salt

1/4 teaspoon black pepper

1 baguette, sliced into 1/2 inch pieces

1/4 cup fresh basil, chopped (for garnish)

Olive oil (for brushing)

Instructions
 

In a medium saucepan, combine the diced tomatoes, sugar, apple cider vinegar, red onion, garlic, thyme, salt, and black pepper. Bring to a boil over medium heat, stirring occasionally.

    Once boiling, reduce heat to low and simmer for about 30 minutes, or until the mixture thickens to a jam-like consistency. Stir occasionally to prevent sticking.

      Preheat your oven to 400°F (200°C).

        Arrange the baguette slices on a baking sheet and brush each slice lightly with olive oil.

          Bake in the preheated oven for about 5-7 minutes, or until the bread is golden and crispy.

            Remove the bruschetta from the oven and let them cool slightly.

              Top each toasted baguette slice with a generous spoonful of tomato jam.

                Garnish with fresh basil and serve warm.
