Tofu with Vegetables

1 block firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

3 cloves garlic, minced

1 teaspoon ginger, grated

2 green onions, chopped

1 tablespoon sesame seeds

Salt and pepper to taste

Begin by preparing the tofu. After pressing the tofu to remove excess moisture, cut it into bite-sized cubes. In a bowl, toss the tofu with soy sauce, sesame oil, and cornstarch until coated evenly. Let it marinate for about 10 minutes.

    Heat a non-stick skillet or wok over medium-high heat. Add the vegetable oil and wait for it to shimmer. Carefully place the marinated tofu cubes in the skillet in a single layer, allowing them to sear without crowding. Cook for about 5-7 minutes on each side or until golden brown and crispy.

      While the tofu cooks, prepare the vegetables. In a separate bowl, combine the sliced bell peppers, broccoli florets, and julienned carrot. Set aside.

        Once the tofu is crisped, remove it from the skillet and set it aside on a plate. In the same skillet, add the garlic and ginger, stirring quickly to release their flavors (about 30 seconds).

          Add the mixed bell peppers, broccoli, and carrot to the skillet. Stir-fry for about 4-5 minutes or until the vegetables are tender yet still vibrant and slightly crunchy.

            Return the crispy tofu to the skillet with the vegetables. Sprinkle with chopped green onions and sesame seeds. Toss everything gently to combine, making sure the tofu and veggies are well-coated and heated through.
