2 lbs boneless, skinless chicken thighs

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium tomatoes, chopped

2 chipotle peppers in adobo sauce, minced

1 cup chicken broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper, to taste

Corn or flour tortillas

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Avocado slices, for serving (optional)

Crumbled queso fresco (optional)

Instructions
 

Cook the Chicken: In a large pot over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 5 minutes. Add garlic and sauté for an additional minute until fragrant.

    Add Ingredients: Stir in the tomatoes, chipotle peppers, ground cumin, smoked paprika, salt, and pepper. Cook for about 5 minutes, allowing the mixture to simmer and reduce slightly.

      Simmer with Broth: Add the chicken thighs to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the chicken is cooked through and tender.
