1 lb ground chicken

1 tablespoon vegetable oil

2 garlic cloves, minced

1 small onion, finely chopped

1 red bell pepper, diced

1 carrot, grated

1/4 cup water chestnuts, diced

3 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon lime juice

1 tablespoon brown sugar

1 teaspoon sesame oil

1/2 teaspoon ground black pepper

1 head of butter lettuce or Romaine lettuce (leaves separated)

Fresh cilantro, chopped (for garnish)

Chopped peanuts (for garnish, optional)

Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat.

    Cook the Chicken: Add the ground chicken to the skillet and cook until browned, breaking it apart with a spatula (about 5-7 minutes).

      Sauté Aromatics: Add the minced garlic and chopped onion to the skillet, sautéing until the onion is translucent (about 2-3 minutes).

        Add Vegetables: Stir in the diced red bell pepper, grated carrot, and diced water chestnuts. Cook for another 2-3 minutes until the vegetables are tender.
