1 lb (450g) boneless, skinless chicken thighs

1/4 cup soy sauce

1/4 cup mirin (Japanese sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 cups cooked jasmine rice

1 cup broccoli florets

1/2 bell pepper, thinly sliced

1 carrot, julienned

2 green onions, sliced

Sesame seeds for garnish

Marinate the Chicken: In a bowl, combine soy sauce, mirin, brown sugar, sesame oil, garlic, and ginger. Add the chicken thighs and toss to coat. Cover and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Cook the Chicken: Heat a large skillet over medium-high heat. Remove chicken from the marinade (reserving the marinade) and add it to the skillet. Cook for about 5-7 minutes on each side, until the chicken is browned and cooked through.

      Add Vegetables: In the same pan, add the broccoli, bell pepper, and carrot. Stir-fry for about 5 minutes or until the vegetables are just tender.

        Glaze with Sauce: Pour the reserved marinade over the cooked chicken and vegetables. Bring to a simmer and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

          Assemble the Bowl: Divide the cooked jasmine rice into bowls. Top with the teriyaki chicken and vegetables.
