Ingredients

1 lb chicken thighs, boneless and skinless

2 tablespoons vegetable oil

1 tablespoon minced garlic

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

¼ cup soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust to taste)

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice (for serving)

Instructions

Marinate the Chicken: In a mixing bowl, whisk together soy sauce, honey, sriracha, and rice vinegar. Add the chicken thighs and coat evenly. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for enhanced flavor.

Sauté the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and cook for about 5-7 minutes, until browned and cooked through. Remove the chicken from the pan and set aside.

Stir-fry the Vegetables: In the same skillet, add minced garlic and ginger, stirring quickly to avoid burning. Add the sliced bell pepper, broccoli florets, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Combine and Thicken: Return the chicken to the skillet, add any remaining marinade, and if desired, stir in the cornstarch slurry to thicken the sauce. Cook for an additional 2-3 minutes until the sauce is heated through and thickened to your liking.

Serve: Serve the Sweet and Spicy Thai Chicken over cooked jasmine rice, garnished with sliced green onions and sesame seeds.
