Ingredients

1 lb (450g) Italian sausage (mild or spicy, your choice), sliced

2 medium bell peppers (one red, one yellow), sliced

1 medium zucchini, sliced into half-moons

2 cups fresh or frozen corn (if using frozen, thaw beforehand)

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley or basil, for garnish (optional)

Instructions

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced Italian sausage. Cook for about 5-7 minutes, stirring occasionally until the sausage is browned and cooked through.

Add the Onion and Garlic: Next, add the chopped onion to the pan. Sauté for an additional 3-4 minutes, until the onion becomes translucent. Stir in the minced garlic and cook for 1 minute, until fragrant.

Add the Vegetables: Toss in the bell peppers, zucchini, and corn. Stir everything together to combine. Cook for about 5-7 minutes, or until the vegetables are tender but still have a bit of crunch.

Season: Sprinkle the smoked paprika and dried oregano over the skillet mixture. Season with salt and pepper to taste. Stir well to ensure everything is evenly coated with the spices.

Finish Cooking: Cook for an additional 2-3 minutes, allowing the flavors to meld together.

Serve: Remove from heat and transfer to a serving dish. Garnish with fresh parsley or basil if desired, and serve immediately.
