Summer Corn Salad

Ingredients
  

4 cups fresh corn kernels (about 6 ears)

1 cup cherry tomatoes, halved

1 medium red onion, finely diced

1 medium red bell pepper, diced

1 medium cucumber, diced

1/4 cup fresh cilantro, chopped

1/4 cup fresh lime juice

2 tablespoons olive oil

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

Prepare the Corn: If using fresh corn, shuck and remove the kernels from the cobs. You can boil or grill the corn first if you prefer a cooked flavor. For raw, simply cut the kernels off.

    Mix the Vegetables: In a large mixing bowl, combine the corn kernels, halved cherry tomatoes, diced red onion, red bell pepper, and cucumber.

      Make the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper until well blended.

        Combine: Pour the dressing over the salad mixture and toss gently until all the ingredients are well coated.

          Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.

            Serve: Before serving, toss the salad again and sprinkle with chopped cilantro for a fresh finish!
