Ingredients

2 large red onions, thinly sliced

3 tablespoons sumac

1 teaspoon sea salt

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Onions: Place the thinly sliced red onions in a large mixing bowl. Sprinkle with sea salt and gently toss to coat. Allow the onions to sit for about 10-15 minutes to soften and release their water.

Make the Dressing: In a small bowl, whisk together the sumac, olive oil, lemon juice, and honey until well combined.

Combine: After the onions have softened, drain any excess liquid. Pour the sumac dressing over the onions and toss well to evenly coat. If you like a bit of heat, add red pepper flakes to taste.

Marinate: Let the mixture sit for at least 30 minutes at room temperature for the flavors to meld, or refrigerate for up to 2 hours (the longer, the better!).

Serve: Just before serving, give the onions another gentle toss. Garnish with fresh parsley and enjoy as a vibrant side dish or as a topping for grilled meats or sandwiches.
