Spinach and Feta Quesadillas (20 minutes)

Sautéed with fragrant garlic and onion, each bite is packed with flavor. Perfect for lunch, dinner, or a snack, serve them hot with sour cream or Greek yogurt for an extra kick. Ready in just 20 minutes, they're both easy to make and healthy!

Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Sour cream or Greek yogurt (for serving)

Fresh cilantro or parsley (for garnish)

Instructions
 

Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.

    Cook Spinach: Add the chopped spinach to the skillet. Sauté until wilted, about 2 minutes. Season with salt and pepper to taste. Remove the skillet from heat and allow to cool slightly.

      Combine Filling Ingredients: In a medium bowl, mix together the sautéed spinach mixture, crumbled feta cheese, and shredded mozzarella cheese until well combined.

        Assemble Quesadillas: Place one flour tortilla on a clean surface. Spread an even layer of the filling mixture over one half of the tortilla. Fold the tortilla in half to cover the filling. Repeat with the remaining tortillas and filling.

          Cook Quesadillas: Wipe the skillet clean and return to medium heat. Place one quesadilla in the skillet, cooking for about 2-3 minutes until golden brown and crispy. Carefully flip the quesadilla and cook the other side for another 2-3 minutes. Repeat with remaining quesadillas.

            Serve: Remove the quesadillas from the skillet and cut into wedges. Serve hot, with sour cream or Greek yogurt on the side and a sprinkle of fresh cilantro or parsley for garnish.
