Spicy Turkey Cauliflower Rice

1 lb ground turkey

1 medium head of cauliflower (about 4 cups riced)

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 cup corn (fresh or frozen)

1 can (15 oz) black beans, drained and rinsed

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Begin by prepping the cauliflower; remove the leaves and stem, then cut it into florets. Using a food processor, pulse the florets until they resemble rice grains. Set aside.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.

      Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

        Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 6-7 minutes.

          Sprinkle in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to combine and cook for another 1-2 minutes.

            Add the riced cauliflower, diced bell pepper, corn, and black beans. Stir everything together, cooking for an additional 5-7 minutes, or until the cauliflower is tender but still slightly firm.

              Taste and adjust seasoning as needed. Remove from heat and let it sit for a minute.

                Serve the spicy turkey cauliflower rice in bowls, garnishing with chopped cilantro and lime wedges.
