Ingredients

8 oz. fresh egg noodles (or any preferred noodles)

4 tablespoons sesame oil

6 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to spice preference)

3 tablespoons soy sauce

2 tablespoons oyster sauce (or vegan alternative)

1 tablespoon rice vinegar

1 tablespoon brown sugar

1 cup fresh spinach, chopped

2 green onions, sliced

1 tablespoon sesame seeds (optional for garnish)

Fresh cilantro for garnish (optional)

Instructions

Cook the Noodles: In a large pot of boiling water, cook the noodles according to package instructions until al dente. Drain and set aside.

Prepare the Sauce: In a small bowl, mix together soy sauce, oyster sauce, rice vinegar, and brown sugar. Set this sauce aside.

Sauté the Garlic: In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and red pepper flakes, stirring constantly for about 2 minutes or until the garlic is fragrant and lightly golden. Be careful not to burn it.

Combine Everything: Add the cooked noodles to the skillet, tossing to coat them in the garlic oil. Pour the prepared sauce over the noodles and stir to mix well.

Add Spinach and Green Onions: Fold in the chopped spinach and sliced green onions, cooking for an additional 2-3 minutes until the spinach is wilted and everything is heated through.

Garnish and Serve: Remove from heat, and garnish with sesame seeds and fresh cilantro if desired. Serve immediately and enjoy the spicy goodness!
