Ingredients

1 can (14.75 oz) pink salmon, drained and flaked

1/2 cup breadcrumbs (preferably seasoned)

1/4 cup finely chopped onion

2 tablespoons fresh parsley, chopped

1/4 cup mayonnaise

1 large egg, beaten

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup vegetable oil (for frying)

Lemon wedges (for serving)

Instructions

In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, and parsley.

In a separate small bowl, mix together the mayonnaise, beaten egg, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, salt, and pepper until well blended.

Pour the wet mixture into the salmon mixture and stir until everything is evenly combined.

Form the mixture into patties, about 3 inches in diameter and 1/2 inch thick. You should have about 6-8 patties depending on size.

Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully add the patties to the skillet, making sure not to overcrowd the pan.

Fry the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to cook them in batches.

Remove the patties from the skillet and let them drain on paper towels to remove any excess oil.

Serve warm with lemon wedges on the side for squeezing over the patties.
