1 cup (226g) unsalted butter, softened at room temperature

1 cup (200g) granulated sugar

4 large eggs, at room temperature

1 teaspoon pure vanilla extract

1 ¾ cups (220g) all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup (120ml) buttermilk, at room temperature

Zest of 1 lemon (optional, for a citrusy twist)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 4-5 minutes.

      Add Eggs and Vanilla: With the mixer running on low speed, add the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then, add the vanilla extract and mix until combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

          Alternate Dry Ingredients and Buttermilk: Gradually add the dry mixture to the butter mixture in three parts, alternating with the buttermilk. Start and end with the dry ingredients, mixing gently until just combined. Be careful not to overmix.

            Add Lemon Zest: If you’re using lemon zest, fold it into the batter gently.

              Pour into Pan: Pour the batter into the prepared cake pan and smooth the top with a spatula.

                Bake: Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.

                  Cool the Cake: Allow the cake to cool in the pan for about 10 minutes, then carefully transfer it to a wire rack to cool completely.
