Slow Cooker Queso Chicken Tacos

2 lbs boneless, skinless chicken breasts

1 cup salsa (your favorite variety)

1 packet taco seasoning (about 1 oz)

1 can (10 oz) diced tomatoes with green chilies (such as Ro-Tel)

1 block (8 oz) cream cheese, softened

1 cup shredded cheddar cheese

1 cup corn (frozen or canned, drained)

1 can (15 oz) black beans, rinsed and drained

Tortillas (flour or corn, as per preference)

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Lime wedges (for serving)

Instructions
 

Prep the Chicken: Place the chicken breasts in the bottom of the slow cooker. Pour the salsa over the chicken.

    Season the Dish: Sprinkle the taco seasoning evenly over the salsa and chicken. Add the diced tomatoes with green chilies, and stir gently to combine without tearing the chicken.

      Cook: Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours until the chicken is tender and easily shreds with a fork.

        Add Cream Cheese: About 30 minutes before serving, add the block of cream cheese on top of the chicken. Cover and let it melt, then stir to combine.

          Mix in Cheddar and Veggies: After the cream cheese has melted, shred the chicken using two forks right in the slow cooker. Stir in shredded cheddar cheese, corn, and black beans. Allow it to heat through for another 15-20 minutes.

            Serve: Warm the tortillas in a skillet or microwave. Spoon generous amounts of the queso chicken mixture onto each tortilla. Top with fresh cilantro, avocado slices, and a squeeze of lime juice.
