2 ripe bananas, mashed

1/2 cup all-purpose flour

1/4 cup sugar (brown or granulated)

1/2 teaspoon baking powder

1/4 teaspoon cinnamon

1/4 teaspoon salt

1 large egg

1/4 cup milk (whole or almond)

1/2 teaspoon vanilla extract

1/4 cup chopped walnuts or pecans (optional)

Oil for frying (vegetable or coconut)

Powdered sugar for dusting (optional)

Instructions
 

In a medium bowl, combine the mashed bananas, egg, milk, and vanilla extract. Mix well until fully blended.

    In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

      Gradually add the dry mixture to the wet banana mixture, stirring until just combined. Fold in the chopped nuts if using.

        Heat a large skillet over medium heat and add enough oil to cover the bottom of the skillet.

          Once the oil is hot, drop spoonfuls of the batter into the skillet, spacing them about 2 inches apart.

            Cook for about 2-3 minutes on each side, until the fritters are golden brown and cooked through.

              Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
