1 cup cottage cheese (preferably low-fat)

4 large eggs, hard-boiled and chopped

1/4 cup celery, finely diced

1/4 cup red bell pepper, finely diced

2 tablespoons green onion, finely chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon Dijon mustard

1 tablespoon mayonnaise (optional for creaminess)

Salt and pepper to taste

Prepare the Eggs: Place the eggs in a pot and cover them with water. Bring the water to a boil over medium heat, then cover and remove from heat. Let sit for 10-12 minutes. After that, cool them under cold running water and peel.
