Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup sour cream or Greek yogurt

1 tablespoon mayonnaise

1 teaspoon chili powder

Juice of 1 lime

Salt to taste

For the Bowl:

2 cups cooked brown rice or quinoa

1 large avocado, sliced

Fresh cilantro leaves for garnish

Lime wedges for serving

Prepare the Shrimp: In a bowl, combine the olive oil, garlic powder, paprika, salt, pepper, and lime juice. Add the shrimp and toss to coat. Let marinate for about 15 minutes.

    Make the Mango Salsa: In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and salt. Mix well and set aside to allow flavors to meld.
