2 cups cooked shredded chicken (rotisserie or leftover)

1 tablespoon taco seasoning

1 tablespoon olive oil

4 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, canned, or frozen)

1 cup black beans, rinsed and drained

1 avocado, diced

½ cup red onion, thinly sliced

1 cup shredded cheddar cheese

½ cup cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Tortilla chips for garnish

Instructions
 

In a skillet over medium heat, add the olive oil. Once hot, add the shredded chicken and taco seasoning. Stir to coat the chicken, heating through for about 5-7 minutes. Remove from heat and set aside.
