Ingredients
  

1 pound smoked sausage, sliced into rounds

2 cups broccoli florets

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium red onion, cut into wedges

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Line a large sheet pan with parchment paper for easy cleanup.

      In a large bowl, combine the sliced sausage, broccoli florets, bell peppers, and red onion.

        Drizzle the olive oil over the sausage and vegetables. Sprinkle with garlic powder, smoked paprika, Italian seasoning, salt, and pepper. Toss everything together until well coated.

          Spread the mixture evenly on the prepared sheet pan.

            Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the veggies are tender and the sausage is browned.

              Once done, remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
