For the Mini Meatloaf:

1 pound ground beef (or turkey)

1/2 cup breadcrumbs (Panko works best)

1/4 cup finely chopped onion

1/4 cup finely chopped bell pepper (red or green)

1/4 cup milk

1 large egg

2 tablespoons Worcestershire sauce

2 tablespoons ketchup (plus extra for topping)

1 teaspoon garlic powder

1 teaspoon dried thyme

1/2 teaspoon salt

1/2 teaspoon black pepper

For the Roasted Potatoes:

1 pound baby potatoes, halved or quartered

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried rosemary (or your choice of herbs)

1/2 teaspoon salt

1/2 teaspoon black pepper

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Meatloaf Mixture: In a mixing bowl, combine the ground beef, breadcrumbs, chopped onion, chopped bell pepper, milk, egg, Worcestershire sauce, ketchup, garlic powder, dried thyme, salt, and black pepper. Mix until all ingredients are well incorporated.

      Form Mini Meatloaves: Scoop the meat mixture and form it into small loaves (about 2-3 inches long) and place them on a greased sheet pan.

        Prepare the Potatoes: In another bowl, toss the halved baby potatoes with olive oil, garlic powder, dried rosemary, salt, and black pepper until evenly coated.

          Arrange on Sheet Pan: Place the seasoned potatoes around the mini meatloaves on the same sheet pan, making sure they have some space to roast properly.
