Ingredients

1 cup watermelon puree (fresh or store-bought)

1/4 cup chia seeds

1 cup almond milk (or any milk of your choice)

1 tablespoon maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

Fresh watermelon cubes for topping

Mint leaves for garnish

Instructions

In a blender, combine the watermelon and blend until smooth to create the watermelon puree.

In a mixing bowl, combine the watermelon puree, almond milk, maple syrup, vanilla extract, chia seeds, and sea salt. Stir well to combine.

Let the mixture sit for about 5 minutes, then stir again to prevent the chia seeds from clumping.

Cover the bowl and refrigerate for at least 2 hours, or preferably overnight. This lets the chia seeds absorb the liquid and thicken the pudding.

When ready to serve, spoon the chia pudding into jars.

Top with freshly cubed watermelon and garnish with mint leaves.

Enjoy your refreshing breakfast jar, either at home or on the go!
