Refreshing Rhubarb Lemonade

Beat the heat with this refreshing rhubarb lemonade! Made with fresh rhubarb, zesty lemon juice, and a hint of sweetness, this drink is perfect for summer gatherings. Simply simmer rhubarb and water, strain it for juice, and mix with sugar and lemon for a deliciously tart beverage. Ingredients
  

2 cups fresh rhubarb, chopped

1 cup granulated sugar

4 cups water, divided

1 cup freshly squeezed lemon juice (about 4-6 lemons)

Lemon slices, for garnish

Fresh mint leaves, for garnish

Instructions
 

In a medium saucepan, combine the chopped rhubarb and 1 cup of water. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes, or until the rhubarb is soft and breaks down.

    Remove the saucepan from the heat and strain the mixture through a fine mesh sieve into a bowl, pressing the rhubarb solids to extract as much liquid as possible. Discard the solids.

      In the same saucepan, combine the rhubarb juice, sugar, and remaining 3 cups of water. Heat over medium heat, stirring until the sugar is completely dissolved.

        Remove the syrup from heat and let it cool to room temperature. Once cooled, mix in the freshly squeezed lemon juice.

          Taste the lemonade and adjust sweetness by adding more sugar if desired. If you like it more tart, add a bit more lemon juice.

            Chill the lemonade in the refrigerator for at least 1 hour before serving.

              To serve, fill glasses with ice cubes, pour the rhubarb lemonade over the ice, and garnish with lemon slices and fresh mint leaves.
