Refreshing Cucumber Lemonade

Made with fresh cucumber juice, tangy lemon, and a touch of honey or agave, this easy recipe is perfect for get-togethers or a relaxing day by the pool. Just blend, mix, chill, and serve over ice with a garnish of mint and lemon slices. In just 40 minutes, you’ll have a delightful drink that everyone will love. Perfect for summer sipping!

Ingredients
  

1 large cucumber, peeled and sliced

1 cup fresh lemon juice (about 6-8 lemons)

1/2 cup honey or agave syrup (adjust for sweetness)

4 cups cold water

Ice cubes

Fresh mint leaves for garnish

Lemon slices for garnish

Optional: a pinch of salt for enhanced flavor

Instructions
 

In a blender, combine the sliced cucumber with 1 cup of cold water. Blend until smooth and then strain through a fine mesh sieve or cheesecloth into a large pitcher to extract the cucumber juice.

    In the same pitcher, add the fresh lemon juice. Stir in the honey or agave syrup until fully dissolved. If using a pinch of salt, add it now.

      Pour in the remaining 3 cups of cold water and stir well to combine. Taste and adjust sweetness if necessary.

        Chill the cucumber lemonade in the refrigerator for at least 30 minutes to allow the flavors to meld.

          Serve the lemonade over ice cubes. Garnish with fresh mint leaves and lemon slices. Enjoy this refreshing drink on a warm day!
