For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups fresh peaches, peeled and diced

½ teaspoon cinnamon

For the cream topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

½ teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9x13-inch baking dish.

    Prepare the Crust: In a medium mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well until all crumbs are evenly coated with butter. Press the mixture firmly into the bottom of the greased baking dish to form an even layer. Bake for 8-10 minutes until lightly golden, then remove from oven and let cool slightly.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add in the eggs one at a time, mixing well after each addition. Then add the vanilla extract. Gently fold in the diced peaches and cinnamon until evenly distributed.

        Assemble and Bake: Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake in the preheated oven for 30-35 minutes or until the edges are set and the center has a slight jiggle. Remove from oven and allow to cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or until fully chilled.

          Prepare the Cream Topping: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together using an electric mixer until stiff peaks form.
