Ingredients
  

1 ripe peach, pitted and diced

2 tablespoons honey

1 tablespoon Dijon mustard

1/4 cup balsamic vinegar

1/2 cup extra-virgin olive oil

Salt, to taste

Freshly cracked black pepper, to taste

1 teaspoon fresh thyme leaves (optional for added flavor)

Instructions
 

In a blender, combine the diced peach, honey, Dijon mustard, and balsamic vinegar. Blend until smooth and creamy.

    While the blender is running, slowly drizzle in the olive oil until the vinaigrette is emulsified and well combined.

      Season the vinaigrette with salt and freshly cracked black pepper to taste. If desired, add the fresh thyme leaves and pulse a few times to incorporate them into the dressing.

        Taste and adjust the seasoning if necessary, adding more honey for sweetness or more vinegar for acidity if preferred.

          Transfer the vinaigrette to a jar or marinating container and store in the refrigerator until ready to use. Shake well before serving.
