Polenta’s roots date back to ancient times, with its origins often traced to the Northern Italian regions of Lombardy and Veneto. Initially made from various grains, the dish evolved over the centuries, with cornmeal becoming the primary ingredient after the introduction of maize to Europe in the 16th century. As corn became more widespread, polenta emerged as a staple food across Italy, providing a hearty and affordable source of nourishment for families.

Ingredients

1 cup coarse yellow cornmeal (polenta)

4 cups water or vegetable broth

1 cup grated Parmesan cheese (or dairy-free alternative)

2 tablespoons unsalted butter (or olive oil for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Fresh herbs (basil, parsley, or chives) for garnish

Instructions

Begin by bringing the water or vegetable broth to a boil in a medium-sized saucepan over high heat.

Once boiling, reduce the heat to medium-low and slowly whisk in the cornmeal, stirring constantly to prevent lumps from forming.

Continue to whisk for about 5 minutes until the mixture thickens and becomes creamy.

Stir in the garlic powder, onion powder, dried thyme, salt, and black pepper, mixing well to combine.

Add the butter (or olive oil) and grated Parmesan cheese to the polenta, stirring until the cheese melts and incorporates smoothly.

Remove from heat and let it sit for a few minutes to further thicken.

For serving, spoon the creamy polenta onto plates or into bowls, garnishing with fresh herbs for a pop of color and added flavor.

Enjoy your delicious polenta as a base for stews, sautéed vegetables, or even on its own!
