One Skillet Salmon with Lemon Orzo

Ingredients
  

2 salmon fillets (6 oz each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 tablespoon olive oil

2 cloves garlic, minced

Zest and juice of 1 lemon

1 cup baby spinach

1/2 cup cherry tomatoes, halved

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Prepare the Orzo: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.

    Cook the Orzo: Add the orzo to the skillet, stirring for about 2 minutes to lightly toast it. Pour in the vegetable or chicken broth, season with salt and pepper, and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 8-10 minutes, or until the orzo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

      Cook the Salmon: While the orzo is cooking, season the salmon fillets with salt, pepper, and half of the lemon juice. After the orzo is cooked, push it to one side of the skillet and place the salmon fillets in the other side, skin-side down. Cook for about 3-4 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

        Add Vegetables: Once the salmon is cooked, add the baby spinach and cherry tomatoes to the skillet. Stir gently until the spinach wilts and the tomatoes are warmed through.

          Combine and Serve: Remove from heat, and add the lemon zest and remaining lemon juice to the skillet. Toss everything together gently to combine. Taste and adjust seasoning if necessary.
