1 lb (450g) boneless, skinless chicken thighs, diced

2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 lemon, zested and juiced

2 cups (300g) fresh or refrigerated gnocchi

1 cup (150g) baby spinach

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt, pepper, and oregano. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.

    Cook the Aromatics: In the same pot, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

      Build the Base: Pour in the chicken broth and heavy cream, stirring to combine. Add the lemon zest and juice, bringing the mixture to a gentle simmer.

        Add the Gnocchi: Once the mixture is simmering, add the gnocchi to the pot. Stir well, and let it cook for about 3-5 minutes, or until the gnocchi are tender and float to the surface.

          Incorporate Spinach and Chicken: Stir in the baby spinach and cooked chicken thighs back into the pot. Cook for another 2 minutes, allowing the spinach to wilt and everything to heat through.

            Final Adjustments: Taste and adjust seasoning, adding more salt, pepper, or lemon juice as desired.
