One-Pan Honey BBQ Chicken Rice

1 lb (450g) chicken thighs, boneless and skinless

1 cup long-grain rice (like jasmine or basmati)

1 ½ cups chicken broth

½ cup honey

½ cup BBQ sauce (your favorite brand)

1 medium onion, diced

3 cloves garlic, minced

1 cup bell peppers, chopped (mixed colors)

1 teaspoon smoked paprika

½ teaspoon black pepper

Salt to taste

2 tablespoons olive oil

1 cup frozen corn (optional)

Fresh parsley or green onions, chopped for garnish

Instructions
 

Prep the chicken: Season the chicken thighs with salt, black pepper, and smoked paprika. Set aside for about 10 minutes to enhance the flavor.

    Cook the chicken: In a large skillet or a deep pan, heat olive oil over medium heat. Add the seasoned chicken thighs and cook for 5-7 minutes on each side until golden brown but not fully cooked. Remove the chicken from the pan and set aside.

      Sauté vegetables: In the same pan, add diced onion and minced garlic. Sauté until the onions are translucent (about 2-3 minutes). Add the chopped bell peppers and cook for another 2 minutes.

        Combine rice and sauce: Stir in the uncooked rice, ensuring it gets coated with the vegetable mixture. Pour in the chicken broth, honey, and BBQ sauce. Mix well to combine all ingredients.

          Return chicken: Place the partially cooked chicken thighs back into the skillet on top of the rice mixture. If using, sprinkle the frozen corn evenly over the top.

            Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan with a lid and let it simmer for about 25-30 minutes, or until the rice is cooked and has absorbed most of the liquid.

              Final touches: Once the rice is cooked, remove the pan from heat. Let it sit covered for 5 minutes. After resting, fluff the rice with a fork and adjust seasoning, if necessary.

                Serve: Garnish with freshly chopped parsley or green onions before serving. Enjoy your delightful and hearty one-pan dish!
