1 can (20 oz) crushed pineapple, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup crushed graham crackers (about 9 full crackers)

1/4 cup unsweetened coconut flakes (toasted if desired)

Fresh pineapple chunks for garnish

Mint leaves for garnish (optional)

Instructions
 

Prepare the Cream Mixture: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

    Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

      Add the Pineapple: Carefully fold the drained crushed pineapple into the cream mixture. Make sure to distribute it evenly for a consistent flavor throughout the dessert.

        Layer the Dessert: In a 9x9-inch serving dish, start by adding half of the crushed graham crackers as the bottom layer. Spread half of the pineapple cream mixture on top, smoothing it out evenly. Repeat with the remaining graham crackers and then the rest of the cream mixture.
