Ingredients
  

3 large eggs

1/4 cup fresh mozzarella cheese, diced

2 tablespoons milk or cream

1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)

1 tablespoon olive oil or butter

Salt, to taste

Black pepper, to taste

Optional: diced tomatoes or sautéed spinach for extra flavor and nutrition

Instructions
 

In a mixing bowl, whisk together the eggs, milk (or cream), salt, and black pepper until the mixture is smooth and slightly frothy.

    Stir in the chopped basil and diced mozzarella cheese, being careful not to break the cheese too much.

      Heat the olive oil (or butter) in a non-stick skillet over medium heat. Allow it to warm until shimmering but not smoking.

        Pour the egg mixture into the skillet, tilting the pan gently to ensure the eggs spread evenly across the surface.

          Cook until the edges start to set, about 2-3 minutes, gently lifting the edges with a spatula to allow the uncooked eggs to flow underneath.

            If using, add toppings like diced tomatoes or sautéed spinach to one half of the omelet when the top is still slightly runny, allowing them to warm through.

              Once the eggs are mostly set but still slightly runny in the center, carefully fold the omelet in half, covering the fillings.

                Reduce the heat to low and let it cook for another minute or two, allowing the cheese to melt completely and the inside to finish cooking.

                  Slide the omelet onto a plate and serve hot, optionally garnished with additional basil or a sprinkle of Parmesan cheese.
