Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1/2 cup grated Parmesan cheese

8 oz fettuccine or your choice of pasta

Fresh basil leaves, for garnish (optional)

Extra Parmesan cheese, for serving

Instructions

Cook the Pasta: Begin by cooking your pasta according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.

Prepare the Chicken: While the pasta cooks, season the chicken breasts on both sides with salt and pepper.

Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and let it rest. Once cooled, slice into strips.

Make the Sauce: In the same skillet, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant. Then, stir in the sun-dried tomatoes, heavy cream, chicken broth, and Italian seasoning. Bring to a simmer, stirring occasionally.

Combine: Reduce the heat to low and stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Add Pasta and Chicken: Toss the cooked pasta into the sauce, and add the sliced chicken on top. Stir everything together gently until well combined and heated through.

Serve: Plate the pasta and chicken, garnish with fresh basil leaves and additional Parmesan cheese. Enjoy!
