Ingredients

1.5 lbs flank steak

2 tablespoons olive oil

3 tablespoons chipotle peppers in adobo sauce (finely chopped)

2 cloves garlic (minced)

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon paprika

Salt and black pepper to taste

1 lime (juiced)

1 tablespoon honey or brown sugar (optional for sweetness)

Fresh cilantro (for garnish)

Instructions

Marinate the Steak:

    - In a bowl, combine olive oil, chopped chipotle peppers, minced garlic, ground cumin, ground coriander, paprika, lime juice, honey (if using), and a pinch of salt and pepper. Mix well to form a marinade.

      - Place the flank steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, making sure it coats evenly. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for maximum flavor).

        Preheat the Grill or Pan:

          - If using a grill, preheat it to high heat. If cooking on a stovetop, heat a cast-iron skillet or grill pan over medium-high heat.

            Cook the Steak:

              - Remove the steak from the marinade, letting any excess marinade drip off. Discard the remaining marinade.

                - Place the steak on the hot grill or skillet. Cook for about 4-5 minutes on one side, or until you achieve a good sear. Flip the steak and cook for an additional 4-5 minutes for medium-rare, adjusting the time for your preferred doneness.

                  Rest:

                    - Once cooked, transfer the steak to a cutting board. Let it rest for 5-10 minutes to allow juices to redistribute.

                      Slice and Serve:

                        - Slice the steak against the grain into thin strips. Garnish with fresh cilantro and serve with lime wedges. This steak pairs wonderfully with warm tortillas, sautéed peppers, or a fresh salad.
