Ingredients
  

8 oz whole wheat or gluten-free pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup fresh basil leaves, chopped

Zest of 1 lemon

Juice of 2 lemons

1/4 cup olive oil

1 tsp maple syrup (optional)

Salt and pepper to taste

A pinch of red pepper flakes (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat or gluten-free pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine cherry tomatoes, cucumber, red bell pepper, and red onion. Toss gently to combine.

      Make the Dressing: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, and maple syrup (if using). Season with salt, pepper, and red pepper flakes to taste.

        Combine Pasta and Vegetables: Add the cooled pasta to the bowl of vegetables. Pour the dressing over the pasta mixture and stir gently until everything is well coated.

          Add Fresh Herbs: Fold in the chopped basil leaves, ensuring they are evenly distributed throughout the salad. Adjust seasoning with more salt, pepper, or lemon juice, if desired.

            Chill and Serve: Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
