Ingredients

1 lb ground beef (preferably grass-fed)

2 tablespoons soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

3 cloves garlic, minced

1 teaspoon freshly grated ginger

1 tablespoon rice vinegar

1 cup cooked jasmine rice

1 cup broccoli florets

1 carrot, julienned

2 green onions, sliced

Sesame seeds for garnish

Optional: sliced cucumbers and/or kimchi for serving

Instructions

Prepare the Vegetables: Start by steaming the broccoli florets until bright green and slightly tender, about 3-4 minutes. Set aside. You can also sauté the carrots briefly in a pan with a little sesame oil for extra flavor and color.

Make the Marinade: In a small bowl, whisk together soy sauce, gochujang, sesame oil, brown sugar, garlic, ginger, and rice vinegar. This will be your savory sauce.

Cook the Ground Beef: In a large skillet over medium-high heat, add the ground beef. Break it apart with a spatula and cook until browned, about 5-7 minutes.

Combine with Sauce: Once the beef is cooked, drain excess grease if necessary. Lower the heat, pour the sauce mixture over the beef, and stir to combine. Cook for an additional 2-3 minutes until the sauce is thickened and flavors are melded.

Assemble the Bowls: Spoon a generous portion of cooked jasmine rice into individual bowls. Top with the ground beef mixture, steamed broccoli, and sautéed carrots.

Garnish & Serve: Finish with sliced green onions and a sprinkle of sesame seeds. For added freshness, serve with sliced cucumbers and/or a side of kimchi.
