Ingredients

For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup panko breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tbsp ginger, grated

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp brown sugar

1/2 tsp black pepper

1 egg, beaten

1 tsp sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp Sriracha (adjust to taste)

1 tsp rice vinegar

1 tsp sesame oil

1/2 tsp garlic powder

1 tablespoon honey (optional for sweetness)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Mix the Meatball Ingredients: In a large bowl, combine the ground beef, panko breadcrumbs, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, brown sugar, black pepper, and beaten egg. Mix until all ingredients are well incorporated, but be careful not to overmix.

Form the Meatballs: Using your hands, shape the mixture into golf ball-sized meatballs (about 1.5 inches in diameter) and place them on the prepared baking sheet, leaving some space between each meatball.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 20-25 minutes or until they are cooked through and browned on the outside. You can check for doneness using a meat thermometer (should read 160°F/70°C).

Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, whisk together mayonnaise, Sriracha, rice vinegar, sesame oil, garlic powder, and honey (if using) until smooth. Taste and adjust the heat level by adding more Sriracha if desired.

Serve: Once the meatballs are done, remove them from the oven and let them rest for a couple of minutes. Arrange the meatballs on a serving platter and drizzle with sesame seeds. Serve with the spicy mayo dip on the side for dipping.

Enjoy this delightful fusion of flavors that brings the essence of Korean BBQ into a fun and easy-to-make dish!
