Jamaican Shrimp Pasta: A Creamy Delight

Ingredients
  

8 ounces of fettuccine or linguine pasta

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 bell pepper (red or yellow), diced

1 teaspoon jerk seasoning

1 cup coconut milk

½ cup heavy cream

1 cup cherry tomatoes, halved

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh cilantro or parsley, chopped (for garnish)

Juice of 1 lime

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta cooking water.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and diced bell pepper, cooking for another 2-3 minutes until softened.

      Cook the Shrimp: Push the vegetables to one side of the skillet and add the shrimp to the other side. Sprinkle the jerk seasoning over the shrimp. Cook for about 2-3 minutes per side, or until the shrimp are pink and opaque.

        Create the Sauce: Pour in the coconut milk and heavy cream, stirring everything together. Add the halved cherry tomatoes and let the mixture simmer for about 5 minutes, allowing the flavors to meld. If the sauce is too thick, add a little reserved pasta water until you get your desired consistency.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce. Season with salt, pepper, and lime juice to taste. Continue to cook for another minute to heat everything through.

            Garnish and Serve: Remove from heat and garnish with chopped green onions and fresh herbs. Serve immediately for a delightful meal!
