Irresistible Moist Apple Cinnamon Muffins for Fall

Ingredients
  

2 cups all-purpose flour

1 ½ teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

¾ cup granulated sugar

¼ cup packed brown sugar

2 large eggs

½ cup unsalted butter, melted and cooled

1 cup buttermilk (or milk mixed with 1 tablespoon vinegar)

1 teaspoon vanilla extract

2 cups peeled and diced apples (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

1 tablespoon sugar for topping (optional)

1 teaspoon ground cinnamon for topping (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners, or grease it lightly with cooking spray.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined.

      In another bowl, combine the granulated sugar, brown sugar, and eggs. Beat the mixture until fluffy, then add in the melted butter, buttermilk, and vanilla extract. Mix until smooth.

        Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Fold in the diced apples and chopped nuts if using, ensuring they are evenly distributed throughout the batter.

            Scoop the batter into the prepared muffin tin, filling each cup about ¾ full. If desired, mix the tablespoon of sugar with the teaspoon of cinnamon and sprinkle on top of the muffin batter for a sweet topping.

              Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
