1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup granulated sugar

½ cup brown sugar, packed

½ cup unsalted butter, melted and cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice)

2 medium apples, peeled, cored, and diced (Honeycrisp or Granny Smith work well)

Optional: ½ cup chopped nuts (walnuts or pecans) or raisins

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt until well combined.

      Combine Sugars and Wet Ingredients: In another bowl, whisk together the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract until smooth. Then, add the buttermilk and mix until combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.

          Add Apples and Optional Mix-ins: Gently fold in the diced apples and any optional ingredients like chopped nuts or raisins.

            Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full. This helps them to rise beautifully without overflowing.

              Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
