2 cups unsweetened almond milk (or milk of choice)

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/2 teaspoon salt

1 teaspoon baking powder

1/2 cup walnuts or pecans, chopped (optional)

1/4 cup raisins or dried cranberries (optional)

1 tablespoon chia seeds (optional)

Additional apple slices for topping

Cooking spray or a bit of oil for greasing the baking dish

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Spray a 9x9-inch baking dish with cooking spray or lightly grease it with oil.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg (if using), salt, walnuts or pecans (if using), raisins or cranberries (if using), and chia seeds (if using).

      Prepare Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, and vanilla extract until well combined.

        Combine Ingredients: Pour the wet mixture into the bowl with the dry ingredients and mix until everything is evenly combined. Gently fold in the diced apples.

          Transfer to Baking Dish: Spread the oatmeal mixture evenly in the prepared baking dish. Top with additional apple slices for an attractive finish.
